No-Salt-Added Marinara Sauce
Jarred pasta sauce is one of the biggest sodium sources in a typical pantry. This version leans on garlic, olive oil and long simmering instead.

Ingredients
- 3 tablespoons extra-virgin olive oil
- 1 large yellow onion, finely diced
- 6 garlic cloves, thinly sliced
- 2 tablespoons no-salt-added tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes (optional)
- 2 (28 oz) cans no-salt-added crushed tomatoes
- 1 teaspoon red wine vinegar
- 1 large handful fresh basil leaves, torn
- Freshly ground black pepper
Method

Warm the olive oil in a heavy pot over medium heat. Add the onion and cook, stirring often, for 8 to 10 minutes until soft and lightly golden. Browning the onion is where much of the flavor comes from, so do not rush it.

Add the garlic and cook for 1 minute, until fragrant but not browned.

Stir in the tomato paste, oregano and pepper flakes. Cook for 2 minutes so the paste darkens slightly and loses its raw edge.

Add the crushed tomatoes. Bring to a gentle bubble, then reduce the heat and simmer uncovered for 25 to 30 minutes, stirring occasionally.

Stir in the vinegar and torn basil. Taste, then finish with plenty of black pepper.
