Asian-Style Chicken Lettuce Wraps

Ingredients

  • 1 lb ground chicken
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 1 cup diced water chestnuts
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • 3 tablespoons low-sodium tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 head butter lettuce, leaves separated
  • 2 tablespoons chopped roasted peanuts

Method

    Heat sesame oil in a large skillet or wok over medium-high heat. Add ginger and garlic, cooking 30 seconds until fragrant.

    Add ground chicken and cook, breaking it up, 5-6 minutes until no longer pink.

    Stir in water chestnuts, carrots, and green onions, cooking 2-3 minutes until vegetables are just tender.

    Whisk together tamari, rice vinegar, and honey, then pour into the skillet and stir to coat everything evenly.
