Black Bean Stuffed Sweet Potatoes
Roasted sweet potatoes overflow with spiced black beans, corn, and avocado for a filling meatless lunch.

Ingredients
- 4 medium sweet potatoes, scrubbed
- 1 tablespoon olive oil
- 1 (15-ounce) can no-salt-added black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen, thawed)
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1 clove garlic, minced
- 1 lime, juiced
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro
- Plain unsalted Greek yogurt, for serving
- Black pepper to taste

Preheat the oven to 400°F. Prick the sweet potatoes a few times with a fork, rub with olive oil, and place on a baking sheet.

Roast for 40-45 minutes, until a knife slides in easily.

While the potatoes roast, warm the black beans, corn, cumin, chili powder, and garlic in a skillet over medium heat for about 5 minutes, stirring occasionally.

Remove the bean mixture from heat and stir in half the lime juice.

Slice each sweet potato open lengthwise and fluff the flesh with a fork.

Spoon the bean and corn mixture into each potato, then top with avocado, cilantro, remaining lime juice, and a dollop of yogurt.
