Chicken and Rice Bake

Ingredients

  • 6 boneless, skinless chicken thighs, unbrined/unenhanced
  • 1 1/2 cups long-grain white rice
  • 3 cups low-sodium chicken broth
  • 8 oz cremini mushrooms, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon lemon juice

Method

    Preheat oven to 375°F.

    Heat 1 tablespoon olive oil in an oven-safe skillet or Dutch oven over medium-high heat and brown chicken thighs 3 minutes per side; remove and set aside.

    Add remaining oil, onion, and mushrooms to the pan; sauté 5 minutes until softened. Add garlic and cook 1 minute more.

    Stir in rice, thyme, and pepper, coating it in the pan drippings, then pour in chicken broth and stir to combine.

    Nestle chicken thighs on top of the rice mixture, cover with a lid or foil, and bake 30-35 minutes until rice is tender and chicken reaches 165°F.

    Let rest 5 minutes, then stir in lemon juice and top with fresh parsley before serving.
