Chicken & Vegetable Soup
A comforting classic built on homemade-style no-salt-added broth, loaded with vegetables and tender shredded chicken.

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups no-salt-added chicken broth
- 2 boneless skinless chicken breasts
- 1 cup egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/4 teaspoon black pepper
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh dill
Method

Heat olive oil in a large pot and cook onion, carrots, and celery over medium heat for 6 to 8 minutes.

Add garlic and cook 1 minute, then pour in the broth and add the chicken breasts, thyme, and bay leaf.

Bring to a simmer and cook 15 to 18 minutes, until chicken is cooked through.

Remove chicken, shred with two forks, and return it to the pot along with the egg noodles.

Simmer 8 to 10 minutes more, until noodles are tender, then discard the bay leaf.

Stir in black pepper, lemon juice, and dill just before serving.

Substitutions
- Use brown rice instead of egg noodles for a gluten-free option; add it earlier since it takes longer to cook.
- Fresh parsley can replace dill if you prefer a milder herb note.
- Rotisserie chicken can replace raw chicken breasts; add it shredded in the last 5 minutes.

- Shredding the chicken instead of dicing gives more surface area to soak up flavor.
- A splash of lemon juice at the end wakes up the whole pot without any salt.
