Ingredients

  • 1 English cucumber, diced
  • 2 cups cherry tomatoes, halved
  • 1 (15-ounce) can no-salt-added chickpeas, drained and rinsed
  • 1/2 red onion, finely diced
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup extra-virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • Freshly ground black pepper, to taste

Method

    In a large bowl, combine the cucumber, tomatoes, chickpeas, red onion, parsley, and mint.

    In a small jar, whisk together the olive oil, lemon juice, garlic, oregano, and red pepper flakes.

    Pour the dressing over the salad and toss well to coat.
