Coconut Chickpea Curry

Ingredients
- Two 15-oz cans no-salt-added chickpeas, drained and rinsed
- 1 tablespoon coconut oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1 tablespoon curry powder
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- One 14-oz can unsweetened coconut milk
- One 14.5-oz can no-salt-added diced tomatoes
- 3 cups fresh baby spinach
- 2 tablespoons fresh lime juice
- 1/4 cup chopped fresh cilantro
