Coconut Vegetable Curry

Warm curry spices and creamy coconut milk turn cauliflower, chickpeas, and spinach into a cozy, low-sodium dinner.

Sodium note

Curry paste can carry a lot of hidden sodium, so this recipe builds flavor from scratch with fresh spices and aromatics instead.

Ingredients

  • 1 tablespoon coconut oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons curry powder
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 small head cauliflower, cut into florets
  • 1 (15-ounce) can no-salt-added chickpeas, drained and rinsed
  • 1 (14-ounce) can unsweetened coconut milk
  • 1 cup unsalted vegetable broth
  • 3 cups fresh spinach
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • Cooked brown rice, for serving

Method

    Heat coconut oil in a large pot over medium heat. Add the onion and cook for 5 minutes until softened.

    Stir in the garlic, ginger, curry powder, turmeric, and cayenne, and cook for 1 minute until fragrant.

    Add the cauliflower, chickpeas, coconut milk, and vegetable broth. Bring to a simmer.

    Cover and cook for 15-18 minutes, stirring occasionally, until the cauliflower is tender.

    Stir in the spinach and cook for 2 more minutes, just until wilted.

    Remove from heat, stir in the lime juice, and garnish with cilantro. Serve over brown rice.

Substitutions

  • Broccoli or green beans can replace cauliflower.
  • Cubed firm tofu can be added alongside the chickpeas for more protein.
  • Kale can be used in place of spinach; add it a few minutes earlier since it takes longer to wilt.

  • For a heartier curry, add cubed sweet potato along with the cauliflower.
  • Full-fat coconut milk gives the richest texture, but light coconut milk works for a lighter dish.
