Creamy Mushroom Risotto
Slow-stirred Arborio rice turns silky and rich, studded with sautéed mushrooms and a hint of thyme.

Ingredients
- 1 1/2 cups Arborio rice
- 5 cups low-sodium vegetable broth, warmed
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter, divided
- 1 lb cremini mushrooms, sliced
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 1/2 cup dry white wine
- 1 teaspoon fresh thyme leaves
- 1/3 cup grated Parmesan (use sparingly)
- 1/4 teaspoon black pepper

Heat 1 tablespoon butter and olive oil in a large pot over medium heat. Sauté mushrooms 6-7 minutes until browned; remove to a bowl.

In the same pot, add onion and cook 4 minutes until softened, then add garlic and cook 1 minute more.

Stir in Arborio rice, toasting 1-2 minutes until edges look slightly translucent.

Pour in white wine and stir until absorbed.

Add warm broth one ladle at a time, stirring frequently and waiting until each addition is absorbed before adding more, about 20-25 minutes total.

Stir the mushrooms back in during the last 5 minutes of cooking.

Remove from heat and stir in remaining butter, Parmesan, thyme, and black pepper until creamy.
