Ingredients

  • 1 1/4 lbs large shrimp, peeled and deveined, unsalted
  • 8 oz linguine, unsalted
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Method

    Cook linguine in unsalted boiling water according to package directions; reserve 1/2 cup pasta water and drain.

    Meanwhile, heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.

    Add shrimp in a single layer and cook 1-2 minutes per side until pink; remove to a plate.

    Add garlic to the skillet and cook 30 seconds, then pour in wine, lemon juice, and red pepper flakes, simmering 2-3 minutes until slightly reduced.

    Whisk in remaining 2 tablespoons butter, then return shrimp and drained pasta to the skillet, tossing to coat, adding reserved pasta water as needed.
