Garlic Yogurt Marinated Chicken Thighs

Ingredients

  • 6 boneless, skinless chicken thighs, unbrined/unenhanced
  • 1 cup plain unsalted whole-milk yogurt
  • 4 cloves garlic, grated
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh cilantro

Method

    In a large bowl, whisk together yogurt, garlic, ginger, lemon juice, cumin, paprika, turmeric, and cayenne.

    Add chicken thighs and turn to coat thoroughly. Cover and marinate at least 1 hour, or up to overnight in the refrigerator.

    Heat olive oil in a large skillet over medium-high heat, or preheat a grill.

    Scrape excess marinade off chicken and cook 6-7 minutes per side until charred spots form and internal temperature reaches 165°F.

    Let rest 5 minutes before serving, topped with fresh cilantro.
