Ginger Tofu Stir-Fry

Crispy pan-fried tofu and crunchy vegetables come together in a savory ginger-garlic sauce in under 30 minutes.

Ingredients

  • One 14-oz block extra-firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 3 tablespoons vegetable oil, divided
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 3 tablespoons low-sodium tamari
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 tablespoons water
  • 2 green onions, sliced

Method

    Toss tofu cubes with cornstarch until lightly coated.

    Heat 2 tablespoons vegetable oil in a large skillet or wok over medium-high heat and fry tofu 6-8 minutes, turning occasionally, until crisp and golden on all sides. Remove to a plate.

    Add remaining oil to the pan and stir-fry broccoli, bell pepper, and snap peas 4-5 minutes until tender-crisp.

    Add garlic and ginger, cooking 30 seconds until fragrant.

    Whisk together tamari, rice vinegar, honey, and water, then pour into the pan along with the tofu, tossing to coat everything evenly.

    Cook 1-2 minutes until the sauce thickens slightly and clings to the vegetables and tofu.

    Top with green onions and serve over rice.
