Hearty Lentil Soup

Ingredients
- 1 1/2 cups dried brown lentils, rinsed
- 2 tablespoons olive oil
- 1 onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 6 cups no-salt-added vegetable broth
- 1 can (14.5 oz) no-salt-added diced tomatoes
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley

Heat olive oil in a large pot over medium heat and cook onion, carrots, and celery until softened, about 7 minutes.

Reduce heat and simmer uncovered 25 to 30 minutes, until lentils are tender.

Substitutions
