Ingredients

  • 1 large bunch curly kale, stems removed and torn into bite-size pieces
  • 1 tablespoon olive oil, for massaging kale
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon nutritional yeast
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard (no-salt-added)
  • 1/4 teaspoon smoked paprika
  • Freshly ground black pepper, to taste
  • 1 cup no-salt bread cubes, toasted for croutons

Method
