Mango Ginger Smoothie Bowl

Ingredients

  • 2 cups frozen mango chunks
  • 1 frozen banana
  • 3/4 cup plain low-sodium Greek yogurt
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon fresh grated ginger
  • 1 tablespoon fresh lime juice
  • 1/3 cup plain unsalted granola
  • 2 tablespoons unsweetened shredded coconut
  • 1/2 cup fresh strawberries, sliced

Method

    Add the frozen mango, frozen banana, Greek yogurt, almond milk, grated ginger, and lime juice to a blender.

    Blend on high for 1-2 minutes, stopping to scrape down the sides as needed, until thick and smooth. Add a splash more almond milk only if needed to blend.

    Pour the smoothie into two bowls, using a spoon to smooth the tops.

    Arrange the sliced strawberries, granola, and shredded coconut over the top of each bowl in sections.

    Serve immediately with a spoon while still thick and cold.
