Minestrone-Style Vegetable Soup
This Italian-inspired vegetable soup is packed with beans, pasta, and greens in a bright, herby tomato broth.

Ingredients
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) no-salt-added diced tomatoes
- 6 cups no-salt-added vegetable broth
- 1 can (15 oz) no-salt-added cannellini beans, drained and rinsed
- 1 cup small pasta, such as ditalini
- 2 cups chopped fresh spinach or kale
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan, plus more for serving

Heat olive oil in a large pot over medium heat and cook onion, carrots, and celery for 6 minutes, until softened.
