Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup unsalted natural peanut butter
  • 1/3 cup honey
  • 1/3 cup mini dark chocolate chips
  • 2 tablespoons ground flaxseed
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Method

    In a large bowl, stir together peanut butter and honey until smooth.

    Add oats, chocolate chips, flaxseed, vanilla, and cinnamon, stirring until fully combined.

    Cover the bowl and refrigerate 10 minutes to firm up the mixture for easier rolling.

    Roll into 1-inch balls using slightly damp hands and place on a parchment-lined plate.

    Chill at least 30 minutes before serving; store in the refrigerator for up to a week.
