Nutritional Yeast Popcorn
Big, cheesy-tasting bowl of popcorn with none of the sodium of the movie-theater version.

Sodium note
Nutritional yeast mimics a cheesy, savory flavor without a grain of salt.
Ingredients
- 1/2 cup popcorn kernels
- 3 tablespoons neutral oil, divided
- 2 tablespoons unsalted butter, melted
- 1/4 cup nutritional yeast
- 1/2 teaspoon garlic powder
- 1/4 teaspoon smoked paprika
- Black pepper to taste
Method
- 1
Heat 2 tablespoons oil in a large heavy-bottomed pot over medium-high heat with 3 test kernels.
- 2
Once the test kernels pop, add remaining kernels and remaining tablespoon of oil, cover, and shake occasionally.
- 3
Once popping slows to a couple seconds between pops, remove from heat and pour into a large bowl.
- 4
Drizzle melted butter over the popcorn and toss well to coat evenly.
- 5
Sprinkle nutritional yeast, garlic powder, smoked paprika, and black pepper over top, tossing continuously to distribute.

Substitutions
- Use olive oil in place of neutral oil for a slightly fruitier finish.
- Skip the butter and use extra olive oil for a dairy-free version.
- Swap smoked paprika for chili powder for a Tex-Mex-inspired popcorn.
Tips
- Toss the popcorn while the butter is still warm so the seasoning clings to every piece.
- A paper bag with the top folded down works great for extra-thorough seasoning shakes.
- Add a pinch of cayenne if you like a little heat with your cheesy crunch.
