Savory Quinoa Breakfast Bowl with Greens and Egg
A protein-packed savory bowl layering fluffy quinoa, garlicky greens, mushrooms, and a runny egg on top.

Sodium note
Quinoa and vegetables are naturally very low in sodium; this bowl comes in around 95 mg per serving thanks to the egg. Avoid pre-seasoned quinoa mixes, which often contain added sodium.
Ingredients
- 1 cup cooked quinoa
- 2 cups fresh spinach, roughly chopped
- 1 cup sliced cremini mushrooms
- 2 large eggs
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh lemon juice
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon freshly ground black pepper
Method

Heat the olive oil in a large skillet over medium heat. Add the mushrooms and cook for 5-6 minutes, stirring occasionally, until browned and their liquid has evaporated.

Add the garlic and red pepper flakes and cook for 30 seconds until fragrant.

Stir in the spinach and cook for 1-2 minutes until just wilted. Transfer the vegetable mixture to a bowl and toss with lemon juice and black pepper.

In the same skillet, fry the eggs to your liking, about 3 minutes for a runny yolk over medium heat.

Divide the warm quinoa between two bowls and top each with the mushroom-spinach mixture.

Place a fried egg on top of each bowl and finish with a sprinkle of fresh parsley.

Substitutions
- Use brown rice or farro in place of quinoa.
