Sesame Soba Noodle Bowl with Vegetables

Cool soba noodles and crunchy vegetables get tossed in a nutty sesame-ginger dressing for a satisfying low-sodium lunch.

Sodium note

Using low-sodium coconut aminos in place of soy sauce keeps the umami flavor without the heavy sodium load of traditional soy sauce.

Ingredients

  • 8 ounces soba noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 red bell pepper, thinly sliced
  • 3 green onions, sliced
  • 2 tablespoons low-sodium coconut aminos
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon natural peanut butter (unsalted)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon sesame seeds
  • Lime wedges, for serving

Method

    Cook the soba noodles according to package directions in unsalted water, then drain and rinse under cold water until cool.

    In a small bowl, whisk together the coconut aminos, rice vinegar, sesame oil, peanut butter, ginger, and garlic until smooth.

    In a large bowl, combine the cooled noodles, carrots, cucumber, bell pepper, and half the green onions.

    Pour the dressing over the noodles and toss well to coat evenly.

    Divide among bowls, top with remaining green onions and sesame seeds, and serve with lime wedges.
