Sizzling Chicken Fajitas

Ingredients
- 1 1/4 lbs boneless, skinless chicken breasts, unbrined, sliced into strips
- 2 tablespoons olive oil, divided
- 1 tablespoon chili powder (salt-free)
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons fresh lime juice
- 8 small corn tortillas, warmed
- 1/4 cup chopped fresh cilantro
Method

Toss chicken strips with chili powder, cumin, smoked paprika, garlic powder, and pepper.

Heat 1 tablespoon olive oil in a large skillet over medium-high heat and cook chicken 5-6 minutes until browned and cooked through. Remove to a plate.

Add remaining olive oil to the skillet and sauté bell peppers and onion 6-7 minutes until tender-crisp and lightly charred.

Return chicken to the skillet and toss with the vegetables.

Squeeze lime juice over everything and toss again.
