Ingredients

- 1/2 cup all-purpose flour
- 1/4 teaspoon black pepper
- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 1/2 cup low-sodium chicken broth
- 1/3 cup dry white wine
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1 tablespoon lemon zest
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced

Slice chicken breasts horizontally into thin cutlets and pound to even thickness.

Mix flour and pepper on a plate; dredge cutlets lightly, shaking off excess.

Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Cook cutlets 3 minutes per side until golden; remove to a plate.

Add garlic to the skillet and cook 30 seconds, then pour in broth, wine, and lemon juice, scraping up browned bits.

Simmer 3-4 minutes until slightly reduced, then whisk in remaining 2 tablespoons butter and lemon zest.
