Spinach and Mushroom Egg Muffin Cups

Sodium note

Ingredients

  • 10 large eggs
  • 1 cup fresh spinach, finely chopped
  • 1 cup finely diced cremini mushrooms
  • 1/4 cup diced red onion
  • 1 tablespoon olive oil
  • 1/4 cup unsweetened almond milk
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 2 tablespoons chopped fresh dill

Method

    Preheat the oven to 350°F and lightly grease a 12-cup muffin tin with olive oil or line with silicone liners.

    Heat the olive oil in a skillet over medium heat. Add the onion and mushrooms and cook for 4-5 minutes until softened and lightly browned.

    Add the spinach and cook for another minute until just wilted. Remove from heat and let cool slightly.

    In a large bowl, whisk together the eggs, almond milk, black pepper, oregano, and garlic powder until well combined.

    Stir the cooled vegetable mixture and fresh dill into the egg mixture.

    Divide the mixture evenly among the muffin cups, filling each about three-quarters full. Bake for 18-20 minutes until the egg cups are set and a toothpick comes out clean.

    Let cool for 5 minutes before removing from the tin. Serve warm or store for later.
