Sweet Potato and Veggie Breakfast Hash
Crispy-edged sweet potatoes tossed with bell peppers, onion, and smoky spices make a satisfying savory breakfast skillet.

Sodium note
This vegetable-forward hash has roughly 40 mg sodium per serving from naturally occurring sources. Skip pre-seasoned hash browns from the freezer aisle, which often add 300+ mg per serving.

- Use regular russet potatoes in place of sweet potatoes if preferred.
- Swap bell peppers for diced zucchini or mushrooms.
- Add black beans (no-salt-added, drained and rinsed) for extra protein and fiber.
Tips
- Let the sweet potatoes sit undisturbed for a couple minutes at a time to get better browning and crispy edges.
- Dice the sweet potatoes uniformly so they cook evenly.
- This hash reheats well in a skillet the next day for a quick breakfast.
