Sodium note

Raw unsalted nuts plus maple and warm spices mean zero added sodium.

Ingredients

  • 3 cups raw unsalted mixed nuts (almonds, pecans, cashews, walnuts)
  • 2 tablespoons maple syrup
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract

Method

  1. 1

Preheat oven to 300°F and line a baking sheet with parchment paper.

  2. 2

In a large bowl, whisk together maple syrup, melted butter, cinnamon, cayenne, ginger, and vanilla.

  3. 3

Add nuts and toss until every piece is evenly coated in the spiced glaze.

  4. 4

Spread nuts in a single layer and roast 18-20 minutes, stirring every 5 minutes to prevent burning.

  5. 5

Cool completely on the pan; the nuts will crisp up as the glaze sets.

Substitutions

  • Use honey in place of maple syrup for a slightly different sweetness.
  • Coconut oil can replace butter for a dairy-free version.
  • Try pumpkin pie spice in place of the cinnamon-ginger combo for a fall twist.

Tips

  • Low, slow roasting keeps the maple glaze from scorching before the nuts crisp.
  • Break up any large clumps once cooled, or leave them for rustic nut brittle-style pieces.
  • Store in an airtight container for up to two weeks — if they last that long.
