Veggie Frittata Slices

This oven-baked frittata packed with spinach, tomatoes, and peppers slices neatly for grab-and-go lunches.

Sodium note

Ingredients

  • 8 large eggs
  • 1/4 cup unsweetened almond milk or low-fat milk
  • 1 tablespoon olive oil
  • 1 cup chopped fresh spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/2 red bell pepper, diced
  • 1/4 cup diced yellow onion
  • 1/4 cup shredded unsalted or low-sodium cheddar cheese
  • 1 tablespoon chopped fresh basil
  • 1/4 teaspoon garlic powder
  • Black pepper to taste

Method

    Preheat the oven to 375°F and grease a 9-inch pie dish or oven-safe skillet.

    Heat olive oil in an oven-safe skillet over medium heat and sauté the onion and bell pepper for 4-5 minutes until softened.

    Add the spinach and cherry tomatoes and cook for another 2 minutes, just until the spinach wilts.

    In a bowl, whisk together the eggs, milk, garlic powder, and black pepper.

    Pour the egg mixture over the vegetables in the skillet, sprinkle with cheese and basil, and transfer to the oven.

    Bake for 18-20 minutes, until the center is just set and the edges are golden. Let cool for 5 minutes before slicing.
